Cranberry Salsa

Over the Christmas break, my younger sister Autumn, made the most amazing salsa. When she was making it I saw her putting in all these different ingredients and was curious. Then, when I tasted a bite, I couldn't stop dipping! Ideally, this is a great Thanksgiving/Christmas recipe but I had a friend from high school ask for the recipe so here it is. Since cranberries are out of season right now I adjusted the recipe for dried cranberries, which is what I used last week. Warning: It is sweet and very addicting!

Ingredients:

  1. 6 oz bag of dried cranberries
  2. 1 granny smith cored, peeled, chopped apple 
  3. ½ a large sweet red pepper, seeded and chunked 
  4. ½ a red onion, chopped/big chunks 
  5. ¾ c sugar 
  6. 1/3 c apple juice 
  7. 3 T cilantro, chopped 
  8. 2 T jalapenos pepper (optional) 
  9. Grated grated lime zest
Directions:
  1.  Disperse ingredients in a blender, until they are coarsely chopped
  2.  Add sugar and the rest and stir it in with a spoon 

That's it, can you believe it? I love quality tasting recipes that don't take a whole day to make. Thanks for the recipe Autumn!
