Twice Baked Potatoes Recipe


Simple, yet delicious and creamy! If you haven't tried them, think a opened baked potato, with a creamy mashed potato like texture, yum! This is one of our favorite ways to eat potatoes in the Shepherd family. Check out the recipe below:

Ingredients
1 recipe baked potatoes (4 potatoes cook at 425 degrees for 40-60 mins)
1/2 cup dairy sour cream
1/4 tsp garlic salt
1/8 tsp black pepper
3/4 cup finely shredded cheddar cheese

Directions
1. Baked potatoes as directed; let stand about 10 minutes. Cut a lengthwise slice off the top of each baked potato. Discard skin from slice and place pulp in a bowl. Scoop pulp out of potatoes and add to the bowl. 
2. Mash the potato pulp with a potato masher/electric mixer on low speed. Add sour cream, garlic salt, and pepper; beat until smooth. Season to taste with salt and additional pepper. Divide the mashed potato mixture evenly among the potato shells. Place in a baking dish.
3. Bake, uncovered, in a 425 degree oven for 20-25 minutes or until light brown. Sprinkle with remaining cheese and bake for another 2-3 minutes.

  2. Thanks, they are my favorite! Yes, I'm coming. Some of my friends can't make it because of the date but I think I have a friend that will make it. I'm just deciding on what to make :)
